Harvest: By hand
Pressing: gentle, followed by immediate chilling to 7-8°C.
Maceration: 12 hours on the skins
Fermentation: drawing off and fermentation at 15°C in stainless steel fermenters
Maturation: part matured in oak with bâttonage, and part
Release: 8 months after final blend assembly and bottling
Alcohol: 13% vol.
Appearance: straw yellow with subtle pale green highlights
Bouquet: elegant, with classic varietal characteristics, displaying pink grapefruit, pineapple, mint, and yellow pepper, set off by an intriguing hint of tomato leaf.
Palate: well structured, complex, with considerable volume and a crisp, energetic acidity; concentrated varietal fruit; markedly lengthy finish.
