Vinification process

Harvest: by hand
Pressing: gentle, followed by immediate chilling to 7-8°C.
Maceration: 48 hours on the skins
Fermentation: at 15°C in stainless steel fermenters
Maturation: 20% matured in oak casks with bâttonage every 15 days; 80% matured in steel, with bâttonage every 30 days.
Final blend: final blend assembled after 8 months, followed by bottling.

Wine description
Appearance: coppery hue, the result of lengthy maceration on the skins.
Bouquet: intense, generous, and complex, with floral notes of wild rose and acacia blossom complementing scents of tropical fruit and apricot, plus pungent hints of dried autumn leaves.
Palate: impressive volume and depth, showing elegance and a beautifully-balanced acidity, mirroring the initial aromas on the nose; a velvet-smooth, lengthy finale infused with yellow peach and ripe apricot.

Serving suggestions 

A perfect accompaniment to fish, shellfish, and mussels, to risottos, vegetable flans, light soups, and light meats. Enjoyable too as an aperitif.

Serve at 12–14°C
