Harvest: by hand into shallow boxes Fermentation: maceration, then fermentation in steel for some 14 days at 20oC. Maturation: 100% in steel with bâttonage. Release: 8 months after bottling.
Appearance: pale ruby Bouquet: elegant and complex, with suggestions of blueberry and blackcurrant. Palate: Elegant, medium structured, but of great character, exhibiting almost explosive fruit that dominates every other component. Concludes on a pleasantly bitterish note classic to the variety.
Accompanies a wide range of delicate dishes, as well as risottos, mixed boiled meat platters, stews and roasts of veal and poultry; aged, medium-piquant cheeses, tripe and offal stews.
