Vinification process

Harvest: Handmade vintage in cases
Pressing: Soft pressing and immediate cooling to 7-8 °C
Maceration: 12 hours with the skin
Fermentation: at 15°C in stainless steel fermenters
Maturation: 20% matured in oak casks with bâttonage every 15 days; 80% matured in steel, with bâttonage every 30 days.
Final blend: final blend assembled after 8 months, followed by bottling.

Wine description
Straw yellow in appearance with green highlights
Delicate and fine bouquet, and complex at the same time. Stylish varietal, with citrus hints of pink grapefruit, mint, yellow paprika.
Structured and intense taste, good vinocity and long aromatic persistence

Serving suggestions 

Excellent as an aperitif, will be an ideal companion to seafood dishes and shellfish

Best served at 8 °C - 10 °C
