Vinification process

Harvest: by hand
Pressing: gentle, with immediate chilling to 7-8°C
Maceration: 24 hours on the skins
Fermentation: at 15°C in stainless steel fermenters
Maturation: in stainless steel tanks for 8 months with bâttonage every 20 days
Release: 9 months after bottling.
Alcohol: 13 % vol.

Wine description

Appearance: a luminous, striking straw yellow
Bouquet: releases fragrances of stone fruit, particularly of green apple, edged with slaty mineral.
Palate: a fine balance between the alcohol and an emphatic, lively vein of acidity; concludes with a lengthy finish that leaves the mouth clean and fresh.

Serving suggestions

Superb as an aperitif, and with raw fish, oysters, and tartufi di mare (warty Venus), or with sauced and poached fish, and soups, creams, and dishes featuring mushrooms.

Serve at 12–14°C.
